This Week's Spotlight Item

Lacinto Kale
Kale is actually a form of cabbage. Kale is usually cooked by steam or boiling to tone down it's bitterness. This hearty, darker green will be a healthy sidekick to many meat and fish dishes. Kale is very high in beta carotene, vitamin K, vitamin C, lutein, zeaxanthin, and reasonably rich in calcium.

Keep its leaves close together and place in perforated plastic bag in the refrigerator for up to 5 to 10 days. For best flavor, eat immediately. To freeze, blanch for 2 to 3 minutes, or until leaves become slightly soft.
