Eggplant
A rich deep purple, this attractive oval or elongated eggplant has a characteristic green calyx and a green stem or a leaf shooting out from the base of its stem, wrapping around the top of this very smooth glossy fruit.. Botanically, eggplant is a fruit and not a vegetable even though it is prepared as the latter. Low in calories, eggplants are a source of fiber, carbohydrates and offer a bit of protein, vitamin C and iron.Eggplants tend to bruise easily. They should be handled carefully. They will keep for up to 1 week in the refrigerator in a perforated plastic bag. Eggplants should be blanched or steamed prior to freezing and can be kept in the freezer for 6 to 8 months.
