This Week's Spotlight Item

Savoy Spinach

A very dark green, savoy spinach is seriously crinkly and offers a very rich spinach flavor. The attractive leaves are five to six inches long and appreciated by chefs for their aesthetic appeal and great taste. A must for dressing up mixed green salads with its exceptional flavor and good looks. Steam over boiling water five to ten minutes. Sauté briefly in a small amount of oil or stock to accompany entrées. To microwave, place one-half pound of washed but not dried spinach in a microwaveable dish; cover loosely; cook four to seven minutes or until tender. To prepare, wash thoroughly.

To store, place in a perforated plastic bag; refrigerate up to one week.
